Kale Salad

As Kale is on my list of favourite ingredients I couldn’t go without at least one recipe all about kale. This is a great super healthy side dish to serve alongside things such as grilled meats, Keftedes (Greek Meatballs, recipe to come) or simply on its own. You can pretty much add any extras you want to this salad such as spring onions or peppers.



Bunch of washed Kale

2 Medium TomatoesKale2

1 small Avocado

Sprinkling of seeds

1 teaspoon Lemon Juice (optional)


4 Tablespoons Olive Oil

2 Teaspoons Lemon Juice

2 Teaspoons Apple cider vinegar

1 Teaspoon runny honey

Pinch salt


Place the Kale into a bowl. In a separate bowl add all of the dressing ingredients until well combined.

Pour the dressing over the kale and massage in with your hands until the kale starts to feel soft, this only takes about 2 minutes. If making ahead of time then make sure you dress the leaves just before serving.

Chop the tomatoes and avocado into small cubes and either mix into the kale of lay on top. If leaving on top then spoon over a teaspoon of lemon juice onto your avocado*.

Finish off with a sprinkling of seeds to give a little crunch and serve.

*Top Tip: Something acidic such as lemon or lime juice stops Avocados from discolouring so make sure you try and coat well.
